Delicious fudgy vegan brownies made with real chocolate and flaxseed eggs.

Ingredients

  • 150 grams of Dark Chocolate
  • 110 grams of Vegan Butter
  • 180 grams of Granulated Sugar
  • 1 teaspoon of Vanilla Extract
  • 20 grams of Cocoa Powder
  • 90 grams of Flour

3 Flaxseed Eggs

  • 20 grams of Flaxseed Meal
  • 130 grams of Warm Water

Instructions

    1. Preheat your oven to 180 degrees Celsius.
    2. Prepare your brownie pan (22,5 cm × 22,5 cm × 5 cm) by brushing the inside of the pan with butter and lining it with baking paper.
    3. Melt the vegan butter and chocolate in a heat proof bowl on top of a saucepan with a small layer of water in it, on medium heat. Stir until the vegan butter and chocolate have melted completely and are well combined.
    4. Combine the flaxseed meal and warm water, let it sit for 5 minutes.
    5. Add the sugar and vanilla extract to the melted chocolate mixture and mix well.
    6. Mix in the flaxseed eggs.
    7. Next sift the cocoa powder and flour and mix these through as well.
    8. Pour the batter into your prepared brownie pan.
    9. Bake the brownies for 20 to 25 minutes.
    10. Optional: add some vegan chocolate ganache.**
    11. Let them cool completely, before cutting them into any shapes or size you'd like.

When are they done?

You'll know the brownies are done when you insert a skewer or knife into the brownies, pull it out and only a few moist crumbs stick to it. If there's wet batter attached: place it back in the oven.

Notes

*Make sure this ingredient is at room temperature.
**Replace the whipping cream with soy whipping cream and use (vegan) dark chocolate.

TIP: Use cookie cutters or a template to create fun shapes.
