Ingredients
Cake Topper
- ±200 grams of White Chocolate or Candy Melts
- Chocolate Food Colouring: Pink, Orange, Yellow, Green, Blue & Gold
Cake
- 5x ½ Batch of Sponge Cake*
- 2 Batches of Nutella Cream Cheese Buttercream
- Small Amount of Simple Syrup
- Food Colouring: Pink, Orange, Yellow, Green & Blue
- 400 grams Golden Chocolate Pearls**
Instructions
- Place the template onto a cutting board and cover it with a sheet of acetate.
- Melt each colour of chocolate in a heat proof bowl on top of a saucepan with a small layer of water in it, on medium heat. Heat the chocolate until it has melted completely.
- Using a toothpick or a piping bag, trace and fill in the design with the different colours of chocolate.
- Wait for each colour to set before adding the next.
- Wait for the chocolates to fully set.
- Cut a circle (16cm) out of each layer of (rainbow) sponge cake.
- Brush each circle with symple syrup.
- Stick the bottom layer to a cake board, using a little bit of Nutella cream cheese buttercream.
- Cover with Nutella cream cheese buttercream and top with the next cake colour.
- Continue until the last cake layer.
- Crumb coat the cake.
- Refrigerate for at least one hour.
- Cover the cake in the rest of the Nutella cream cheese buttercream.
- Place the chocolate cake topper on top.
- Place the gold chocolate pearls all around the cake.
- Refrigerate for at least two hours, until fully set.
Notes
*Each coloured a different Rainbow Colour: Pink, Orange, Yellow, Green & Blue and each layer baked seperately in a brownie pan (22,5 cm × 22,5 cm × 5 cm).
**You may need more or less depending on their size and weight. A good alternative are Maltesers covered with Gold Food Colouring Powder.
