Vanilla, strawberry and chocolate yule log cakes.

Ingredients

Cakes

Filling (per cake)

  • 125 grams of Whipping Cream
  • 1 teaspoon Vanilla Extract

White Chocolate Ganache

  • 250 grams of Whipping Cream
  • 600 grams of White Chocolate

Strawberry Ganache

  • Leftover White Chocolate Ganache
  • 8 grams of Freeze Dried Strawberry Powder
  • Pink Food Colouring

Chocolate Ganache

  • 250 grams of Whipping Cream
  • 350 grams of Milk Chocolate

Chocolates

  • About 80 grams of White Chocolate
  • About 80 grams of Pink Chocolate
  • About 80 grams of Milk Chocolate

Decoration

  • 250 grams of Whipping Cream
  • 1 teaspoon of Vanilla Extract
  • Maltesers
  • Smarties
  • Strawberries

Instructions

  1. Brush each cake with simple syrup.
  2. Whip up the whipping cream with vanilla extract, for the filling.
  3. Spread the whipped cream onto the cakes.
  4. Roll up the cakes and refrigerate, for 30 minutes.
  5. Use a round cookie cutter to make a template for the chocolate decorations.
  6. Create chocolate circles with spirals on top.
  7. Cut off ends and prepare the chocolate ganache for the first cake roll, starting with vanilla, then strawberry and then chocolate.
  8. Stick the cake roll to the cakeboard (20 cm × 5cm) using the chocolate ganache.
  9. Place on a wire rack above a container.
  10. Pour over the chocolate ganache.
  11. Colour the leftover white chocolate ganache with pink food colouring and add in the freeze dried strawberry powder.
  12. Repeat for steps 8, 9 and 10 for each kind of cake.
  13. Attach the chocolate decorations to the sides of the cake rolls.
  14. Refrigerate until set, about an hour.
  15. Decorate the cake rolls with whipped cream.
  16. Decorate the cake rolls with slices strawberries, Maltesers and Smarties.
