Sweet and creamy Strawberry Tiramisu, for those who don’t love coffee or just love strawberries.

Delicious and eggless strawberry tiramisu.
Ingredients
- 1 Batch of Sponge Fingers*
- 1 Batch of Strawberry Syrup
- 250 grams of Mascarpone
- 50 grams of Powdered Sugar
- 1 teaspoon Vanilla Extract
- 250 grams of Whipping Cream
- Optional: Powdered Sugar for decoration
- Optional: Strawberries for decoration
Instructions
- Whip up the mascarpone slowly, to smoothe it out.
- Add the powdered sugar, all at once, and the vanilla extract and whip again slowly.
- Add in the whipping cream as it mixes and keep whipping until it reaches a mousse-like consistency.
- Place your square ring mould (20cm × 20cm × 5cm) onto a layer of aliminium foil and clingfilm, wrap around the mould.
- Place sponge fingers at the bottom of your mould.
- Brush with some strawberry syrup.
- Use half of the filling to top off the sponge fingers.
- Optional: Add in chopped strawberries.
- Repeat the last three steps and scrape the tops with a palette knife, to smoothe it out.
- Freeze for at least 60 minutes.
- Unmould the tiramisu once it has fully set.
- Optional: Decorate the top with strawberry hearts.

*You can also use store bought sponge fingers.
