Creamy no-bake lime cheesecake with a sand cookie base and topped with lime curd.

Ingredients

  • 200 grams of Sand Cookies
  • 40 grams of Butter
  • 400 grams of Cream Cheese*
  • 100 grams of Powdered Sugar
  • 200 grams of Whipping Cream
  • 50 grams of Lime Juice
  • Optional: 2 grams of Lime Zest

Instructions

    1. Prepare four ring moulds (7,5 cm) by lining them with acetate.
    2. Melt the butter and combine with cookie crumbs.
    3. Press cookie crumbs into the moulds.
    4. Refrigerate until hard, at least an hour.
    5. Whip up whipping cream and set aside.
    6. Mix together cream cheese, powdered sugar, lime juice and lime zest.
    7. Fold whipped cream into cream cheese mixture.
    8. Pour mixture onto cookie base.
    9. Refrigerate until fully set, at least 8 hours.
    10. Remove from mould and remove acetate.
    11. Spread some lime curd on top.

Notes

*Make sure this ingredient is at room temperature.
