Easter Malteser Cheesecake

Brownie, no-bake cheesecake, chocolate ganache, cream cheese buttercream and lots of Maltesers and Malteser bunnies.
Ingredients
Brownie Base
- ¼ Batch of Milk Chocolate Brownies**
- 25 grams of Chopped Maltesers
Milk Chocolate Cheesecake Layer
- 125 grams of Milk Chocolate
- 150 grams of Cream Cheese*
- 125 grams of Whipping Cream
- 1 teaspoon of Vanilla extract
White Chocolate Cheesecake Layer
- 125 grams of White Chocolate
- 150 grams of Cream Cheese*
- 125 grams of Whipping Cream
- 1 teaspoon of Vanilla extract
- 50 grams of Chopped Maltesers
Decoration
- Small amount of Milk Chocolate Ganache
- Small amount of White Chocolate Ganache
- ⅓ Batch of Cream Cheese Buttercream
- ± 10 Maltesers
- ± 8 Malteser Bunnies
Instructions
- Prepare the milk chocolate brownie, adding in the chopped up Maltesers, and bake it in a ring mould (16 cm).
- After removing the cooled brownie and cleaning the ring mould, prepare your ring mould (16 cm) by lining it with acetate and placing it on a cake board.
- Optional: Place cake board on top of aluminium foil and plastic wrap, wrap around the sides.
- Add in the Malteser milk chocolate brownie layer, press the brownie towards the edges a little if it there's any space between it and the acetate.
- Melt the milk chocolate and let it cool to room temperature.
- Whip up whipping cream and set aside.
- Whip up cream cheese, add in the vanilla extract, then mix in the cooled chocolate.
- Fold the whipped cream into the cream cheese mixture.
- Pour mixture onto Malteser Brownie base and spread evenly.
- Prepare the white chocolate cheesecake layer in the same manner, adding in the chopped Maltesers at the very end.
- Pour on top of milk chocolate cheesecake layer and spread evenly.
- Refrigerate for two hours.
- Pour milk chocolate ganache on top.
- Refrigerate for about 30 minutes.
- Place white chocolate ganache in a piping bag and pipe stripes on top of the milk chocolate ganache layer.
- Refrigerate for at least four hours.
- Remove the cake ring and acetate.
- Pipe cream cheese buttercream around the border.
- Decorate with Maltesers and Malteser Bunnies.
Notes
*Make sure this ingredient is at room temperature.
**Replace dark chocolate with milk chocolate.
