Lime Curd

Buttery, sweet and tart all at once. If you’re a fan of lime, this lime curd is the perfect topping for your dessert!

Deliciously sweet and tart lime curd.

Ingredients

  • 4 Egg Yolks*
  • 130 grams of Sugar
  • 80 grams of Lime Juice
  • Optional: 4 grams of Lime Zest
  • 100 grams of Butter*

Instructions

    1. Mix together egg yolks, sugar, lime juice and lime zest in a heat-proof bowl.
    2. Heat mixture over a double boiler.
    3. Whisk continuously until the sugar has dissolved.
    4. Add the butter and let it melt.
    5. Keep stirring until the mixture has thickened, for about 20 to 30 minutes.
    6. Pour into a jar or bowl.
    7. Place plastic wrap directly on top of the curd.
    8. Let cool at room temperature.

*Make sure this ingredient is at room temperature.
