Deliciously sweet and tart lemon curd.
Ingredients
- 4 Egg Yolks*
- 130 grams of Sugar
- 80 grams of Lemon Juice
- Optional: 4 grams of Lemon Zest
- 100 grams of Butter*
Instructions
- Mix together egg yolks, sugar, lemon juice and lemon zest in a heat-proof bowl.
- Heat mixture over a double boiler.
- Whisk continuously until the sugar has dissolved.
- Add the butter and let it melt.
- Keep stirring until the mixture has thickened, for about 20 to 30 minutes.
- Pour into a jar or bowl.
- Place plastic wrap directly on top of the curd.
- Let cool at room temperature.
